What Is in Beef Bouillon Powder

Jump to the recipe…

A popular way to add flavor to mutual backpacking food staples like noodles and soup is by calculation bouillon powder.  It is basically what that footling spice packet is that comes with Top Ramen, for example.  No 1 really believes that there is any nutrition in there, but it sure makes things tasty. And all the same, what if you lot could brand your very own homemade bouillon powder with more nutrition and less filler?

Why Make Homemade Bouillon Pulverisation?

I like to build my meals from basic dehydrated ingredients that I have stocked in my fridge and I thought it might be fun to encounter if I could come upwardly with a "spice" packet of my own.  That would mean starting from scratch, because if you have ever read the labels on burgoo powder or base of operations at the store you know there'due south no way I could use that.

When you become a diet label reader, it tin can come equally quite a surprise all the things you might detect hidden (or not so hidden) inside your favorite food products.

Store bought bouillon base with fillers

Meet, even these folks couldn't figure out the give-and-take bouillon and merely went with "base."

Yeah, no thank y'all to the soybean oil, grits and powder, potato starch, pea pulverization, and maltodextrin (saccharide).

What You Will Need For Bootleg Craven or Vegetable Bouillon Powder

I made this in 2 parts, a chicken office and a vegetable part. Y'all tin can skip the craven function and just go for the vegetables and still have a tasty bouillon pulverization for vegan dishes. See side by side section below…

Starting with the craven side, I opted for a broth I buy at Costco.  I make my own beef broth only I have never liked the work of making craven goop with all those basic.  Information technology's worth it for turkey vegetable soup but not and so much for goop.  For me, anyway. Your telephone call. If yous desire to make your own chicken goop, here's a proficient recipe .

There are a couple decent brands at Costco, and of grade you can find pastured chicken brands like this one.   Notwithstanding, to make this recipe worth it, I would need a high volume of goop and the skillful stuff is cost prohibitive for me.  I can always add collagen to my bouillon afterwards like this brand from Thrive Market place.

Organic chicken broth in a carton

For this part, bring 32 ounces of broth to a boil so reduce to a soft simmer on medium low heat.  Your goal is to reduce it down to a thick sauce and then yous tin can put information technology in the dehydrator by evaporating the water (and it'due south by and large water).

Reducing broth in a saucepan

It will take 25-30 minutes and as the liquid gets low in the pan, you lot will want to watch it and stir occasionally to go on it from called-for to the bottom of the pan.  I reduced mine down to about a few tablespoons. Aye, that's information technology.

I put this tiny bit of flavor golden onto a jelly roll tray and allow it dry out overnight on the meat setting (145 to 155 degrees) until I was able to pick information technology up and break it into pieces.  You lot desire information technology brittle.  I put it in my spice grinder (the food processor is a bit big for this job).

If it doesn't break down into a powder, put the pieces dorsum into the dehydrator to dry a bit longer.

Eventually, I had four teaspoons of pulverisation.  Information technology was actually a little depressing.  So little…

Doing the math, I figured this gave me iv servings (one tsp per 8 ounce cup of water) to bring it back to it's original land.  You lot can see why those shop bought brands add all that filler!

Adding Vegetables To Your Homemade Burgoo Powder

Debating my options, I thought most the how my married man makes his broth, with but straight upwards veggies.  Following his cue last year, I started storing my vegetable scraps in the freezer to add together to soups and such for flavor or if I needed to make vegetable broth for vegan recipes for the family.

Hmmm…I bet I could employ them to supplement my broth and add more than vegetables to my meals. Bonus!

Vegetable remnants in canning jars

I had two canning jars of scraps, almost eight cups frozen.  It was a mix of onion, kale, celery, carrots, parsley, broccoli and cabbage.  I tossed it in the nutrient processor and broke information technology downwards into small pieces.  If you don't have scraps, any combination of similar vegetables will work.

Mincing a variety of vegetables in the food processor

If you are going the vegan road or but want more flavor, you could soak your vegetables a few hours in coconut aminos earlier dehydrating them to requite more depth to the flavour of the bouillon.

Once dry out, I tossed this in the food processor so the spice grinder to suspension information technology down into a powder.

You desire it to be equally fine as possible so that information technology will rehydrate into a broth and non have too many chunky things floating around.  If you will probably exist calculation this to meals, not such a big deal, just if you want to drink it, definitely more appetizing.

Spicing Up Your Homemade Bouillon Powder

Now I had some chicken pulverization and some vegetable powder to utilize for a base to add flavor to.

I was just going to use dried spices I already had but I scored some fresh that day; some sage, rosemary and thyme. Hey, I think there is a song…don't pretend yous didn't just read that to the tune of Simon and Garfunkel. These three spices are also commonly called poultry seasoning, maybe because it reminds you lot of how turkey and stuffing smell fills the house on Thanksgiving twenty-four hour period.

Fresh poultry spice herbs on a dehydrator tray

I added these to the dehydrator set to "herbs", about 95 degrees, and permit dry a few hours until crisp and brittle.  They should flake when you pick them up.  Except rosemary, she is one tough chick.  She's more stubborn and likes to just crack instead.

If y'all desire to encounter the difference between herbs you dry yourself and the ones you buy in the store, here was my newly fabricated poultry seasoning on the left next to some store bought on the right.

Big difference, right?

Put Your Homemade Burgoo Powder Together

Okay, now I am prepare to put them together.  I used 2 tablespoons of the vegetable pulverization…

A tablespoon with powdered vegetable scraps

…and 1 teaspoon of the chicken powder for my base, plus 1 teaspoon sea salt and one/ii teaspoon garlic powder. If yous are thinking that is a lot of common salt, trust me.  Bouillon needs to be a fleck salty and you will desire that on the trail.  I tried it with a chip less and although the flavor was there, the common salt makes the drink more appetizing.  You tin can vary the amount based on your own wellness needs.

A tablespoon with powdered chicken broth bouillon

Two bowls with homemade bouillon powders

So for one, I added 1 teaspoon of my stale poultry seasoning spices to brand a "chicken" season and to the other one I added 1 teaspoon of dried ginger to make an "oriental" flavour, in an endeavour to mimic popular Top Ramen flavors.

To make a cup of broth, I used i heaping teaspoon to viii ounces of hot water.  I guess I should accept known it would be green with all the vegetables, merely it still took me by surprise.  And it was quite tasty, too.

A glass mug with homemade bouillon liquid

I think I will employ the bootleg bouillon powder in recipes as I make my backpacking meals, but I too like the idea of keeping the spices separate so when I make meals on trail I tin can add together whatever flavor I feel like the day!
